As far as freezing it goes, I have to admit that my family gobbles bread up too fast to have ever have had the need to preserve it for another day, but my guess is that it would be fine if it was wrapped up well. For the longest time, we were always so broke, and having all the ingredients and supplies never happened...now, I'm just stuck in a rut of always doing the same thing. And WAAAY overweight.
