Enchilada Casserole


Tried a new recipe tonite, Enchilada Casserole. I loved this recipe!!

1 lb turkey

1 can (10 oz) enchilada sauce

1 cup salsa

6 flour tortillas (10 inch)

2 cups fresh or frozen corn

4 cups (16 oz) shredded cheddar cheese


1. In a large skillet, cook turkey over medium heat until no longer pink, drain. Stir in enchilada sauce and salsa, set aside.

2. Place 2 tortillas overlapping as necessary in bottom of a greased 13 x 9 inch pan. Cover with 1/3 of the turkey mixture, top with 1 cup corn sprinkle with 1 1/3 cup cheese.

3. Repeat layers once, then top with remaining tortillas, turkey and cheese.

4. Bake uncovered at 350 degrees for 30 min or until bubbly.

6-8 servings

My Awesome Kroger Deal!!


I am always so jealous of people that find awesome deals and post a pic on their blog. Well I went to Kroger today for the last day of the 10 for 10 deals, and I think I scored pretty well. I was really excited about a tip I got from Money Saving Mom http://moneysavingmom.com/. She talked about Oscar Meyer Lunchables for only 25 cents after a coupon from http://print.coupons.com/couponweb/Offers.aspx?pid=13927&zid=ym31&nid=10&bid=alk0228180243040458d1224519. Anyway, there wasn't any Turkey sub Lunchables to be found at Kroger or Walmart!! But did save $36.26 at Kroger today and spent $36.26 and this is what I got:

10 bottles of VO5 Shampoo and Conditioner

10 Arrid deodorants

10 packages of Kroger frozen veggies 12 oz.

4 boxes of 2 count soap bar Kroger brand

1 box of butter

My husband isn't doing backflips, but I am darn happy!! :)

Faith!!

The title of my blog, Finding My Life in Faith, made me think a little more than usual today. Life lately has not been the most pleasant. Finances around here have not been the best, due to my hours getting cut here and there and John not having much work. So, I thought about the phrase, "You gotta have faith" and what does this really mean?? For me, this means that I have faith in God that my situation will get better. I don't know when it will get better but I know it will! I can lean on God and trust in my faith to get me through. Faith isn't a waivering issue for me, it has to be all or nothing! To really have that awesome relationship with Him, you must have faith when times are good and not so good. So, I will keep on praying for endurance to get through this marathon of life and have faith that my God is with me every step of the way. "I live by faith, not by sight." 2 Corinthians 5:7 (NIV) This verse is so pertinent right now in my life, because things don't look so hot right now, but faith is getting me through!! This also brings a song to my mind right now. "Oh, no you never let go, through the calm and through the storm. Oh, no you never let go, with every high and every low. Oh, no you never let go. No, Lord you never let go of me!! Check out the video to follow, it really sums up my thoughts on faith.

Happy Valentine's Day


I just wanted to say Happy Valentine's Day to everyone. I am supposed to be in bed resting, but every time I lay down I can't breath due to my nose being congested!! My husband took the two older kiddos to church, while the two younger stayed with me and are now sleeping. Why am I not sleeping?? I feel like someone ran me over with a truck!! I have to feel better before work tomorrow, it will be a long week. So why am I not sleeping? Can't breath through my nose, head hurts, throat hurts and I am coughing. Whatever, thought I would post a Valentine's greeting and show you what I got the kids for Valentine's Day. We really don't make a big deal out of Valentine's Day, but I like doing special little things for my family. So, this morining after feeding the baby (7 am), I made heart shaped blueberry muffins (I should of taken a pic) and coffee (for the hubby). When they left for church, I set out a few Valentine bags with a few odd trinkets. Nothing much, just a few items from the $$ bins at Target and the Dollar store. And Last but Not Least......Cullen



This is my youngest child, Cullen Seamus. He was born October 26, 2009. Cullen was a few weeks early and boy did he come in with a bang. My doctor and I decided to induce labor a few weeks early because I was Gestational Diabetes and his weight was off the charts(according to ultrasound). I also had polyhydraminos (too much fluid) with Brady, so my doctor wasn't taking any chances with this one!! The night before I was to be induced, I had a 103 fever, coughing, chills and couldn't hear out of my left ear (bad ear infection)!! I was miserable and even considered postponing the induction. But something inside made me want to go through with it regardless of the illness. Praise God that we did induce that day. Cullen was posterior, which made my labor that much more painful. I don't do the epidural thing and never had with any of the other three, my labors go pretty quick, so I just wait it out without pain meds. When he finally made it out into the world, he had the umbilical cord wrapped around his neck twice and a "true knot" in the umbilical cord. I was told that this "true knot" is a cause for stillbirth!! What if I did wait until I felt better, or waited to my due date (2 weeks away)? I know now what that something inside was that was nudging me along!! And I just praise Him for allowing me to hold my son in my arms everyday, when the situation could have taken a turn for the worst.

Shane and his Valentine!



This is my son Shane, he is 5 yrs old and full of energy!! He is in all day kindergarten and brought home this Valentine for mom today. Awwwww! I love these little crafts he brings home!! My little man is in to trains and cars. He overheard me chatting with my computer about how well it doesn't work. He suggested we send it to the smelter (circa Thomas the Train videos)!! LOL!! I love his little personality.

Today I got to attend my daughter Abbigayle's Honors Assembly at her school. She received all A's and 1 B+. We are so proud of all of Abbi's acheivements. We are truly blessed. Abbi has such a heart for God and loves to share her faith with anyone! I just wanted to share with everyone how special my children are to me and here is Abbi's special moment. Great job Abbigayle, I love you and may God Bless you!!
